Description

Curry masala powder, called Kari Masala Thool in Tamil, is a traditional spice blend made by roasting and grinding whole spices for use in everyday gravies and curries. Part of our range of Pure Organic foods, this curry masala powder is made without artificial colours, fillers, or added preservatives.

What makes our curry masala powder different:

  • Whole spices roasted in small batches for a fresher, more aromatic blend
  • No stone ground fillers or husk added to bulk up the quantity
  • Balanced spice ratio suited for both vegetable and meat-based gravies

How to use curry masala powder:

  • Add 1 to 2 teaspoons while sauteing onions and tomatoes for the base of a curry
  • Mix into kulambu or sambar towards the end of cooking for a stronger aroma
  • Use as a dry rub before frying vegetables or paneer for added flavour

Blooming the spice in cold pressed oils for a few seconds before adding vegetables helps release its full aroma.

FAQ

Can curry masala powder be used for both vegetarian and non vegetarian gravies?

Yes, curry masala powder is versatile enough for vegetable kurma, sambar and dal based gravies, as well as mild meat curries where a general purpose spice blend is needed. For stronger, meat-specific flavour profiles, dedicated blends work better than a general curry masala.

What is the difference between curry masala powder and garam masala?

Curry masala powder, or Kari Masala Thool, is generally milder and more suited for South Indian style gravies, while garam masala tends to have a stronger, more North Indian flavour profile with different spice proportions. They are not always directly interchangeable in regional recipes. This guide on garam masala vs curry powder explains when to use each.

Does curry masala powder need to be cooked in oil before adding to a gravy?

Yes, lightly cooking curry masala powder in hot oil or ghee for a few seconds helps release its aroma fully before adding vegetables or liquid to the pan. Using gingelly oil for this step adds an extra layer of traditional flavour to the final dish.

Can curry masala powder be used the same way as paruppu podi with rice?

No, curry masala powder is meant for cooking into gravies and curries, not eaten directly with rice like paruppu podi, which is a dry mix meant to be had as is with ghee. The two serve different purposes in a typical South Indian meal.

Does curry masala powder pair well with millet based meals?

Yes, curry masala powder-based gravies pair well with cooked millets like kodo or foxtail millet as a rice substitute, adding flavour without extra preparation. For more ways to use the blend, this guide to curry powder recipes has ideas beyond the basic curry.
