Description

Rice flour is the flour every South Indian kitchen falls back on. Idiyappam on a weekday morning, puttu on Sunday, kozhukattai during Vinayagar Chaturthi, murukku for Diwali, and a spoon in the dosa batter for a crisp edge. Ours is milled from pacharisi in small batches and packed fresh, with no bleaching, no fillers and no anti-caking agents. Like everything in our range of Pure Organic foods, it has nothing added. If you also grind your own batter at home, idly rice is the companion buy.

What you can make with it

  • Idiyappam, soft and non sticky, when kneaded with boiling water
  • Puttu, layered with grated coconut and steamed
  • Kozhukattai and modak outer shells
  • Murukku and thattai, mixed with urad flour
  • Dosa, adai and paniyaram batter, or stirred into our millet dosa mix for a lighter, crisper finish
  • Kolam, since it is plain unbleached rice flour with nothing added

Raw, not roasted

This is raw pacharisi maavu. For idiyappam and puttu, dry roast it on a low flame for three to four minutes until it feels light and loses the raw smell, then use hot water. Roasting at home beats flour that has sat roasted on a shelf for months, the same reason we sell unpolished grains rather than pre-processed ones.

Storing it

Rice flour is gentle on digestion and naturally gluten free, which makes it easy to pair with heavier grains through the week. Keep it airtight and away from heat, and it will hold its aroma well past the millet flours. For ideas on what to rotate alongside it, read this guide to the types of millets grown across India.

Sold in fresh 500 g packs. For rice flour 1kg, two packs beat one large bag left open. Browse our whole grains to stock the rest of the shelf.

FAQ

Can I use this rice flour for idiyappam?

Yes. Dry roast the flour on a low flame for three to four minutes, knead with boiling water and a pinch of salt into a soft dough while it is still hot, press immediately and steam for six to eight minutes. This gives soft, separate idiyappam strands that do not turn sticky.

Is this flour suitable for puttu and kozhukattai?

Yes, both. For puttu, sprinkle water little by little until the flour holds shape when pressed in your fist, then layer with grated coconut and steam. For kozhukattai, use boiling water so the dough stays pliable and does not crack while shaping the shells.

Is your rice flour raw or roasted?

It is raw pacharisi maavu, ground and packed fresh rather than pre-roasted. Roast it at home when a recipe calls for it. Home roasted flour has a better aroma and texture than flour that has been sitting roasted on a shelf for months.

Can rice flour be used for kolam?

Yes. This is plain unbleached rice flour with no additives, so it flows well through the fingers and stays food safe, which matters when kolam is drawn at the doorstep where birds and ants feed on it.

Is rice flour gluten free?

Yes, rice contains no gluten, so arisi maavu suits gluten free and wheat free cooking. If you are coeliac, check the pack label for cross contamination guidance before use. If you are weighing rice against millets for everyday meals, this comparison of millet vs rice can help you choose.

What is the price and pack size of your rice flour?

Rice flour is sold in 500 g packs at the listed price. If you need 1 kg, order two packs so the flour stays fresh instead of one large bag sitting open for weeks. You can find other flours in our flour and batter mix range.
